roasted beet soup, whipped goat cheese, crispy prosciutto, aged balsamic

brussel sprouts, spinach, parmigiana reggiano, croutons, white anchovy vinaigrette

wine poached pears, asher blue cheese, hazelnuts, local greens, champagne vinaigrette

2nd base (choice of):

scallop crudo, dashi, bacon, candied lemon peel

burrata, castelvatrano tapenade, olive oil, tomato vinegar, crusty bread

oysters, foie gras bacon, vanilla

smoked chicken liver pate
