Experience the Taste of Fall with Brizas' Chef Falvo

This fall is “the” time to dine at Briza Restaurant. Exciting, full of flavor and delicious dishes were added to the fall menu under Executive Chef and former Bravo TV Top Chef Texas contestant Janine Falvo.

The tasty fall menu includes:
Ahi Tuna with Oxtail Marmalade
*ahi tuna with oxtail marmalade, citrus polenta and kale chips 
(a great bite, savory)
 Wine Pairing: Pomela Sauvignon Blanc

*smoked pumpkin soup with onion custard and spiced pumpkin seeds (AWESOME and amazing wine pairing)
 Wine Pairing: Hugel Gewürztraminer

*black pepper pepperdelle, a pinot braised pork shoulder with sweetgrass gouda
 (smoky and sweet. The wine is Chef Falvo’s favorite)
 Wine Pairing: Buena Vista Pinot Noir

*NY Strip with creamed kale, bacon 2x potato with a cabernet reductions (spicy with a licorice flavor)
 Wine Pairing: William Hill Bench Blend Cab
Autumn Hot Toddy

Autumn Spiced Shortbread
Briza’s Pastry Chef Valerie Tyes -
*autumn spiced shortbread, poached fruit with a vanilla crème fraiche 
(the toddy brings out the sweetness in the dish)
 Paired: autumn spiced hot toddy

Working 8 years as a chef in Sonoma, Executive Chef Falvo pairs her plates with selected wine choices under the guidance of Deanna Knieriem, Beverage and Food Operations Manager.
